Blackberry Sage Sorbet

Blackberry Sage Sorbet

Bright fruity flavors paired with an earthy touch from herb leaves, this Blackberry Sage Sorbet is nothing like you've had before. A chilling combination of sweet and somewhat savory in each and every scoop. 

Ingredients
3 3/4 cups of frozen blackberries
1/2 cup frozen pineapple 
20 sage leaves
2 cups sugar
1 1/2 cups water
2 tbsp. lemon juice
1/4 tsp. kosher salt 
1 shot St. Germain Elderflower Liqueur

STEP 1 In a small saucepan over medium heat, add sugar, water & sage. Stir until sugar is completely dissolved. Remove from heat and let the sage sit in the liquid for 30 minutes. Strain out the sage and allow the syrup to cool to room temperature. 

STEP 2 In a blender, add frozen fruit, 1 3/4 cups of the sage simple syrup, lemon juice and St. Germain and blend until smooth. Add salt and blend until incorporated. Taste and adjust lemon juice as needed. 

STEP 3 Pass the mixture through a strainer, using a spoon to push the liquid through (if necessary). Store in a freezer-safe container and freeze until solid, at least 4 hours. 

FIN. Before serving, remove sorbet from the freezer and allow to sit for 20-20 minutes to soften.
