Mexican Caesar Salad Dressing
If you love a good caesar salad, you'll love this spicey twist. I tend to enjoy it tossed on a kale salad and topped with salmon or crispy chickpeas.
Ingredients
6 anchovies in oil
2 egg yolks
2 garlic cloves
1 large lime, juiced
2 teaspoons dijon mustard
1 chipotle pepper in adobo sauce
1 tsp cumin
1 tsp smoked paprika
1/2 cup vegetable oil
1/2 cup parmesan cheese grated
STEP 1 In a blender, combine anchovies, garlic, lime juice, mustard, chipotle pepper, cumin, paprika, and cheese. Blend until the garlic and cheese are finely grated.
STEP 2 With the blender on medium speed, slowly add in one egg yolk at a time. Then, go down the sides of the blender with a spatula to catch the excess.
STEP 3 Maintaining the medium speed, slowly drizzle in the oil continue to blend until everything is well incorporated.
FIN. Toss THE dressing over your favorite lettuce or kale and serve the top with your favorite topping like crispy chickpeas and/or pickled onions.
