Fried Green Tomato Sliders
2 green tomatoes
12oz goat cheese, room temp
½ cup all-purpose flour
1 tbsp smoked paprika
2 eggs
1 tbsp water
2 cups panko
Vegetable oil for frying
Salt & pepper to taste

Step 1 From top to bottom, not left to right, slice the tomatoes into four or five 1/4-inch-thick slices. Season each side with salt and pepper and liberally spread a spoonful of the room temp goat cheese over the top of each piece.
Step 2 Separate 3 bowls for dredging. To the first bowl, add the flour. Add the eggs and 1 tbsp of water to the second bowl, and whisk to combine. To the 3rd bowl, add the panko, 1/2 tbsp of kosher salt, and 1/2 tbsp of smoked paprika to the third bowl. Stir to combine.
Step 3 Starting with the 1st bowl, lightly dust the tomato slice with the flower and shake to remove the excess. Next, dip the flour-covered tomato into the egg mixture. Allow the excess egg to drip off before moving to the 3rd bowl. Lastly, coat both sides of the tomato with the panko mixture. Using your hands, gently press the panko into all s of the panko. The goat cheese may have shifted a little during this last step, so use your hands to reshape it. Repeat the steps until all the tomato slices are breaded. Refrigerate for 30 minutes before frying.
Step 4 Heat the oil to 350°F in a deep pot. Carefully lower the tomatoes into the hot oil, flipping only once. Fry until they are golden brown on all sides. Using a slotted spoon, remove tomatoes and place them on a rack to dry, ensuring the goat cheese side is facing up.
FIN. Build your slider while the tomatoes are still hot, and enjoy!
Here's the order I like to build my sliders:
first - a layer of the spicy strawberry pepper jam
followed by mixed lettuce and then another layer of pepper jam
then 2 slices of prosciutto
the fried green tomato
Topped with 1 more spoon of jam.
