Curry Crispy Chickpeas
This five-ingredient chickpea snack is an easy way to add bold flavor to your salad. An excellent substitute for croutons, these bite-size beans pack a whole lot of crunch. Enjoy them on top of your salads or alone as a midday snack.

Ingredients:
15oz can of chickpeas, rinsed and dried thoroughly
1/2 tbsp curry powder
1/4 tbsp cumin
1/4 tbsp dried tarragon
1/4 tsp salt
olive oil for cooking

STEP 1 Rise the chickpeas with water and then use a paper towel to pat them dry thoroughly. Ensure no moisture is present, or the chickpeas will not get crispy during frying.

STEP 2 In a small bowl, combine the curry powder, cumin, tarragon, and salt. Stir well to combine and then set aside.

STEP 3 To a cold pan, add your chickpeas and cover with olive oil. Turn on heat to medium-low to slowly sautè. Stir the chickpeas frequently until they are golden and crispy, about 20-30 minutes. 

STEP 4 Using a slotted spoon, transfer chickpeas to paper towels to drain and immediately sprinkle with season mix. Toss to coat, then allow to cool for 3 minutes.

FIN. Serve atop a salad and enjoy!
