Watermelon Salad

1 cup watermelon
2 mini cucumbers, sliced
2 tbsp mint, chopped
2 tbsp basil, chopped
1 shallot, thinly sliced
1 tbsp feta cheese
4 tbsp balsamic vinegar
salt and pepper to taste

STEP 1 Combine the thinly sliced shallot, balsamic vinegar, and 1 tsp of salt in a bowl. Stir until the shallots are well coated. Set aside, allowing the shallot to marinate in the vinegar for 10 minutes.

STEP 2 Using a melon baller or 1/4 tsp measuring spoon, scoop out small balls of the watermelon. Add the balls to the bowl of vinegar, along with the sliced cucumber and toss to coat. Refrigerate for 20 minutes.

STEP 3 Add the chopped basil and mint to the salad and gently toss to combine.

FIN. Top with feta cheese and serve cold.
