Warm Delicata Squash Salad
Delicata squash is here for a good time, not a long time. This Warm Delicata Squash Salad is one of my favorite in-season dishes. A flavorful mix of sweet and tangy with a touch of spice, this salad gives e "fall vibes".
This recipe serves 2 people, perfect for a date-night appetizer.
1 delicata squash, sliced and seeds removed
1 Ruby Red Grapefruit, zested and juiced
1/2 cup white wine vinegar
1 cup golden raisins
1 1/2 tbsp honey
3 Calabrian peppers
STEP 1 Preheat your oven to 375 degrees F. In a bowl, add the delicata slices, 1 tbsp of olive oil, 1 tbsp of honey, and crack pepper. Toss until the slices are evenly coated. Layout your slices on a non-stick pan and roast for 15 minutes on each side, until they are fork-tender and turn golden brown.
STEP 2 In a saucepan over medium, combine the grapefruit juice and zest, vinegar, raisins, honey and peppers. Allow to cook until he raisins have absorbed almost all of the liquid.
FIN. Over a bed of lettuce, serve you warm delicata slices, raisins and pistachios. Dress with a vinaigrette of your choice.
