Snapper Ceviche

½ lb. fresh red snapper
3/4 cup fresh lime juice
1 tbsp fresh orange juice
3 tomatoes, diced
1/2 shallot, sliced
4 tsp fresh cilantro, chopped
1 tsp accent
salt & pepper to taste

Step 1 Rinse the fresh red snapper and t pat dry with a paper too or cloth. Using a sharp knife cut the snapper into small 1/2" chunks and transfer to a glass dish. 

Step 2 Cover the red snapper with lime and orange juice. Make sure that the fish is e distributed and almost completely covered with the liquid. Cover in place in the refrigerator to marinate for one hour.

Step 3 After an hour add the diced tomatoes, chopped shallot, chopped cilantro, and accent to the snapper mixture. Stir to combine.

FIN. Salt and pepper to taste. Serve with sweet potato or plantain chips and hot sauce.
