Roasted Butternut Squash Salad
This recipe serves 2.
1 cup butternut squashed, peeled, and cubed into 1" pieces
Mixed salad greens
Salt and pepper
STEP 1 Preheat oven to 400 degrees F. Lightly coat the roasting pan with olive oil. Generously season with fresh ground pepper and salt. Spread the butternut squash cubes onto the pan, making sure that they are on a single layer.
STEP 2 Roast the squash for 20-30 minutes, until they start to turn golden brown on one side and are fork-tender.
STEP 3 Add the warm squash to a bed of mixed greens. Crumble goat cheese on top.
FIN. Top with your favorite vinaigrette and serve while the squash is still warm.
