Coconut Kale Salad

Coconut Kale Salad
This salad features a delicious couscous melody. The sweetness from the coconut couscous compliments the savory kale dressing to make for an extremely flavorful meal. Eat as a salad or enjoy on the go as a wrap.

1 cup coconut milk
1 cup couscous
1 tbsp unsalted butter
1 tsp salt
1/4 cup golden raisins
2 tbsp coconut flakes
1 15oz can of sweet corn
1 tsp cumin
1 tsp smoked paprika
kale, rinsed, dried, and sliced
1-2 tbsp Smoke Tomato Kale Dressing

STEP 1 In a small saucepan, bring coconut milk to a boil. Add a pinch of salt and the butter, stirring until the butter has melted and the salt has dissolved.

STEP 2 Add in the couscous, raisins, coconut flakes, stir a few times, then cover with a lid and remove from heat. Allow to sit covered for 5 minutes. After 5 minutes, fluff with a fork and set aside.

STEP 3 Add 1-2 tbsp of the smoked tomato kale dressing to a bowl of kale. Using your hands, massage the mixture into the salad until it has softened and decreased in size.

FIN. Top your dress kale with as much as you like of the coconut couscous mixture, and enjoy!
